I've never told this story to another living soul
Ok, Kristen, this is for you. This is one on my favorite things that I make and I really want you to make it. It is really good and extremely easy.

Sesame-Crusted Tilapia with Wasabi-Ponzu Sauce
1 tablespoon chopped green onions
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 teaspoon brown sugar
1 teaspoon grated lemon rind
2 teaspoons lemon juice
2 teaspoons honey
1.25 teaspoons prepared wasabi paste
1 teaspoon grated fresh ginger
1 tablespoon vegetable oil
1 pound tilapia fillets
.25 teaspoon sea salt
6 tablespoons sesame seeds (I like to mix black and white seeds, but you can use either one)
1. Combine first 10 ingredients (green onions through ginger) in a bowl. Stir with a whisk.
2. Heat oil in a large skillet over medium,-high heat.
3. Sprinkle tilapia with salt. Put sesame seeds in a shallow bowl or a plate. Dredge tilapia in sesame seeds. 
4. Add tilapia to pan. Cook 2 - 3 minutes on each side or until done.
5. Garnish with green onions, if desired. Serve with sauce. (Somewhere along the line, I started serving this fish on top of mashed potatoes and it is mighty tasty, and other people say they like it, too, but that might just be my weird thing.)

It's a modified cooking light recipe. I make it with a different fish, more oil, and more sesame seeds.

Shit, how did I miss this entry for so long? I am remiss in my stalker duties and I am filled with shame.
